WFD? Pot Roast!!!

My online mom's group is always asking "WFD?" (what's for dinner) because we're constantly looking for easy, delicious meal ideas.  One of my personal favorites?  Pot Roast.  It's beyond easy and so delicious.  It's one of those meals you prep, throw in the oven, and forget about for a few hours.  When you're ready to come back...shazam!  Flavorful, pull apart goodness.

Here's what I use.

Beef (this is also delicious with pork)
Salt/Pepper to taste
Carrots
Onion
Celery
Olive Oil
Beef Stock



Season your beef with the salt and pepper and put it aside while you make your veggies.

Preheat your oven to 350 degrees.

Cut your celery and carrots into same size pieces and half your onion.  Pour a little olive oil in your pan to coat it and saute your veggies until soft, while browning your onion.




 
Be careful with the oil!!  I had a run in a few weeks ago while frying up some chicken.  Now my wrist looks diseased :(
 

 
After everything is soft/browned, add it into your baking dish.  Cover this with the beef stock, cover it, and put it in the oven for THREE TO FIVE HOURS.

 
Now we wait.
And wait.
And wait.
Man...the house smells amaaaaaazing!
 
After a few hours you can take it out of the oven and it should look close to this.

 
Shred and devour.
